The lambs at Ranchline are raised under the watchful eyes of Peruvian herders along with their dogs that live and work on the ranches in the United States. As it was some eight hundred years ago in the Andes Mountains of Peru, the rich history of the lncan Empire continues to exist in the modern day method of raising and producing our authentic gourmet Ch'arki.
"Ch'arki" is the name derived from the Quechuan language of the Peruvian lncan Empire to describe the process of preserving meat in Pre Columbian days. The name Ch'arki then morphed into the Spanish word Charqui and the process was carried northward as the Spanish Conquistadores began exploring North America. It is believed that Native Americans adopted the process from the Spaniards to preserve their meat products. The product of this process became known as Jerky and the Indians passed it along to the earliest settlers of America.
